Today, we drained a tank of Cab off the skins into another tank for ML fermentation ( Malolatic fermentation).  The wine is passed through a screen to catch unwanted seeds and jacks (small stems).  Once the tank is drained, a fan is placed on top of the tank to blow out the CO2 so that I may enter the tank and not pass out. 

Now its time to suit up.  With rain gear on accompanied with a safety harness (just in case) and a shovel, its time to enter the tank.

Once I have the ok, I begin to shovel the entire tank.  The trick here is not to let the shovel off the ground so as to not kill your back.

 Once the wine is in the micro bin, it is sent to the press.  The free run wine is kept seperate from press wine, so it gets its own tank.

Then all is left is clean up. Fun physical day… try it sometime!!
